The Infinity series is the series created by Kotaro Uchikoshi and Takumi Nakazawa in their time at KID, before they created Zero Escape and Root Double, respectively.

To pull from @Mori#2088's words: The three games build off each others' ideas, so it's recommended to play them in order, but isn't strictly required - if you're not intrigued by one, feel free to jump ahead (you'll miss some small callbacks, but they're otherwise self contained). Never7 is structured and written like a dating sim, with sci-fi elements coming in secondary, but lays a foundation for the series. Ever17 has some dating sim elements, but is at its core a complex sci-fi mystery set in a disaster scenario. Remember11 fully embraces the sci-fi genre, and focuses primarily on survival and solving the fantastical mystery.

You may also have heard of the games 12Riven and Code_18, however, neither of these games have a complete fan translation patch.

Never7 -The End of Infinity-

Genre: Science Fiction, Dating Sim, Mystery, Timeloop

You play as Makoto, a student who never attends the lectures at the school. As a punishment, you have to attend an extra seminar on an island with other classmates. However, when you arrive on the island, strange things start happening. A girl is found dead on April 6th, with a small bell in her hand. Immediately after that, you found yourself in the bed and see the date - April 1st! Was the vision of the girl just a dream, or do you possess a power to predict events? This is what you will have to find out, as a series of strange deaths make your seminar much more suspenseful than you have thought.

The version of Never7 provided is a full reimplementation of the game in the LÖVE engine, known as the Eternal Engine. The game requires the LÖVE engine to be installed to run, which you can install here. The current uploaded version is 0.5. An installation guide for the Android version can be read here.
Additionally, the PSP version of Never7 introduces a variety of bugs, making it even less preferred compared to the LÖVE reimplementation.

The recommended route order is Yuka > Haruka > Saki > Kurumi. None of the routes are skippable!

Ever17 -The Out of Infinity-

Ever17 is the tale of seven individuals who become trapped 51 meters below the surface in the underwater marine theme park 'LeMU'. After an incident, almost half of LeMU becomes flooded, and the path to the surface and the communication lines are cut off. In addition, LeMU is under constant assault by severe water pressure, limiting time to find a means of escape to 119 hours. Escape is not the only concern, however; many questions arise as to the legitimacy of the accident and whether or not those trapped there were brought there for a purpose.

The PSP version of Ever17 has an outdated translation when compared to the PC version and introduces various bugs as well. While still playable, it is not the preferred version to play for that reason.
Unlike the Never7 LÖVE reimplementation, these games do not run natively on Mac or Linux and require to be run using Wine, Proton, or other similar programs. Additionally, there is a guide to get the game running on Steam Deck / Linux here.

The recommended route order is Tsugumi > Sora > You > Sara > Coco. None of the routes are skippable!

Remember11 -The Age of Infinity-

Fuyukawa Kokoro, a third-year sociology major, boards a plane bound for Hokkaido to meet a research subject in the Specified Psychiatric Hospital for Isolation and Aegis, or SPHIA. For unknown reasons, her plane crashes in the mountains in the middle of a snowstorm. Of the 31 passengers, only she, Kusuda Yuni, Yomogi Seiji, and Mayuzumi Lin survive unharmed. Unable to establish communication with the outside world due to the fierce snowstorm, the four decide to take shelter in an empty cabin and wait until the storm passes.

Yuukidou Satoru, falls from the SPHIA clock tower. He later awakens with some memory loss and the realization that someone is out to kill him. Unable to leave the SPHIA facility due to a snowstorm, Satoru's only chance at living is to find that person among the three other residents (or perhaps the hidden culprit) of SPHIA.

Shortly after, Kokoro and Satoru realize that they are somehow exchanging bodies and Yuni appears to be at both of their locations...
